Characteristics: well away from the city, this old shepherd’s and pilgrim’s relay, on the way of Saint James became today the meeting place of hikers and fishermen who can enjoy trout fish, near the Aspe, Ossau and Oloron « gaves ». Characteristics: The appetite reclaims its rights when the menu announces in whole words that « all the products are exclusively fresh” and that “it could be temporary out of stock”.
Actually, when the farm cheeses and blood sausage coated with caramel dish arrives, proof is done : sweet, fondant, not fatty, blood sausage is served in curious slivers of 10 cm of diameter and is especially prepared for the Chaudron by a regional butcher, also a childhood friend… The rest of the carte is composed of Béarn incontrovertibles, “garbure” or Oloron rib steak.
